— Riesling
Riesling is the most versatile variety of all and for
some people capable of producing wines of at least the
same international quality standard as Pinot Noir, particularly
in the cooler regions of New Zealand. Depending on the
quality and structure of the fruit we either ferment the
must to dryness or produce sweet, low alcohol wines modelled
on German Rieslings from the Mosel/Saar/Ruver region.
The dry wines are quite austere and focused and ideal
with many seafood entrées.
The sweet wines are often very sweet but never “sticky”
with alcohols as low as 7-8%. They are all sourced from
the same vineyards using the traditional selection process
of German Rieslings and a terminology which is not well
understood in New World countries. Here “late harvest”
is usually associated with the ripest, sweetest fruit.
In the selection process of German Rieslings it is quite
the opposite.
